The Story Behind Our Takumi Menu

This summer, Shoryu celebrates 50 years of our founder Tak Tokumine's legacy.

The name Takumi 匠 feels especially fitting for this menu. Not only does it carry Tak's name within it, but translated from Japanese it means master artisan. A title earned through years of dedication, precision and commitment to craft.

Tak arrived in the UK in the 1970s with a vision to share Japanese food and culture with a British audience. At a time when few people had tried sushi or even heard of ramen, he helped introduce the UK to the richness of Japanese cuisine.

In 1976 he founded what would later become Japan Centre, creating a home for Japanese food in London long before it became widely available. For five decades he has helped build bridges between Japan and the UK, championing producers and inspiring generations of diners, chefs and restaurateurs.

That same spirit led to the opening of Shoryu Ramen in 2012, bringing authentic Hakata tonkotsu ramen to London.

To celebrate Tak and fifty years of his work, the Takumi menu brings together some of his favourite dishes alongside flavours inspired by the nostalgic kissaten cafés of 1970s Japan. Cosy, thoughtful places where food and conversation were meant to be enjoyed slowly.

Our Takumi menu is a nod to that era and a celebration of craftsmanship, heritage and the dishes that continue to shape ramen culture in London today.

Wagyu Sukiyaki Kamatama

Nibo-Goma Tsukemen

This dish invites you to experience two unique broths, each with a completely different flavour profile that together create a balanced and layered taste experience.

Tsukemen is a dipping style of ramen where thick noodles are served separately from the broth. Instead of the noodles sitting in the soup, you dip each bite into the broth yourself, controlling the flavour with every mouthful.

Our summer tsukemen set features two contrasting broths:

Earth
A chilled broth with a toasted, creamy sesame flavour, refreshing and perfect for warmer days.

Sea
A warm broth layered with niboshi sardine and our signature tonkotsu broth, creating something deep, savoury and intensely satisfying.
